Carob-Roasted Vegetable Medley

Elevate your side dishes with a hearty and nutritious carob-roasted vegetable medley. Carob adds a unique, subtly nutty flavor to your vegetables, making this dish a standout companion for any main course.

Ingredients:

1 cup whole carob pods

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon garlic powder

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 zucchini, sliced

1 red onion, chopped

Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Soak the whole carob pods in warm water for about 30 minutes to soften them. Drain and pat dry.
  3. In a large bowl, toss the carob pods with olive oil, dried thyme, dried rosemary, garlic powder, salt, and pepper.
  4. Spread the carob pods evenly on a baking sheet and roast in the preheated oven for 10 minutes.
  5. Add the chopped bell peppers, zucchini, and red onion to the baking sheet. Toss everything together and continue roasting for an additional 20-25 minutes, or until the vegetables are tender and caramelized.
  6. Serve warm as a side dish with your favorite main course.
