Ingredients:
1 cup whole carob pods
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 zucchini, sliced
1 red onion, chopped
Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Soak the whole carob pods in warm water for about 30 minutes to soften them. Drain and pat dry.
- In a large bowl, toss the carob pods with olive oil, dried thyme, dried rosemary, garlic powder, salt, and pepper.
- Spread the carob pods evenly on a baking sheet and roast in the preheated oven for 10 minutes.
